The chief Jérôme Jaegle, is the child of the village of Kaysersberg. Son and grandson of a butcher, Jérôme is as much a market gardener and crazy about permaculture as he is a chief. He cultivates fruits and vegetables, some of them unknown or forgotten, and skillfully picks local plants and herbs to reveal the flavours on his plates.

In a sober room, decorated with natural materials and wood, he serves an inventive cuisine that respects seasonality and puts nature back at the heart of gastronomy.

L'Alchémille opens in 2015 and the chef was awarded his first Michelin star shortly afterwards, which also rewards his global approach with a Green Macaroon in 2020.
